DIABETIC COOKIES

1 c. water
1/3 c. salad oil
1 1/2 c. raisins
2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt
1 tsp. soda
2 tsp. liquid sweetener
2 Tbsp. water
2 eggs, beaten
2 c. flour
1 tsp. baking powder
1/3 c. chopped nuts

Combine water, oil, raisins and spices. Boil together 3
minutes. Cool. Dissolve salt and soda in sweetener and water.
Add to beaten eggs. Stir into cooled mixture. Add flour and
baking powder. Mix well, add nuts. Drop by teaspoonfuls onto
greased cookie sheets. Bake at 375 degrees until lightly brown, about
10 minutes. Store in refrigerator.
