LEMON DELIGHT POUND CAKE

2 1/2 c. flour
1 1/2 c. sugar
2 1/2 tsp. baking powder
1/2 tsp. salt
3/4 c. orange juice
3/4 c. oil
2 tsp. lemon extract
4 eggs

Mix sugar, eggs, oil and lemon extract. Add orange
juice. Beat until well blended. Add flour, baking powder,
salt and continue beating until well blended. Generously
grease and lightly flour a 12 cup tube pan or 2 loaf pans.
Pour cake mixture into prepared pan and bake at 350 degrees for 40 to
45 minutes. Top with glaze.

Lemon Delight Pound Cake Glaze:
1 1/2 c. powdered sugar
1/2 c. lemon juice
Combine sugar and lemon juice and blend until smooth.
Remove cake from oven. Prick deeply every inch with a fork.
Pour glaze over hot cake in pan. Allow to stand 10 minutes.
Invert cake onto plate and spoon remaining glaze over cake.
