2 1/2 to 3 c. confectioners
1/4 tsp. cream of tartar
2 egg whites
1/2 tsp. vanilla
Beat egg whites. Sift sugar and add cream of tartar.
Gradually add dry mixture to egg whites until well moistened.
Add vanilla. Beat on high speed until peaks form.
