1/2 c sugar
1 tsp. vanilla extract
20 vanilla wafer cookies
1 can (8 oz.) fruit pie
1 lb. cream cheese, softened
Preheat oven to 375 degrees. Cream the cream cheese with the
sugar. Add the eggs and vanilla. Drop the vanilla wafers,
flat side down, in the bottom of twenty 2 1/2-inch wide FOIL
baking cups. Place on ungreased baking sheet. Fill each cup
three quarters full with the cheese filling. Bake for 15 to 20
minutes. Watch closely and do not overbake. (Do not be
alarmed if cheesecakes puff up, then fall or crack.) Remove
from oven, cool. Top with pie filling and serve. Makes 20
