CHOCOLATE MINTS

3/4 c. butter or margarine
1 1/2 c. firmly packed brown
sugar
1 Tbsp. water
2 c. (12 oz.) semi-sweet
chocolate pieces
2 eggs
2 1/2 c. flour
1 1/4 tsp. baking soda
1/2 tsp. salt
about 1 lb. green chocolate
mint wafers (any kind of
solid chocolate may be
used)

Over low heat cook margarine, sugar and water until
margarine is melted. Add chocolate pieces and stir until
almost melted. Remove from heat and allow to cool in large
mixing bowl (about 10 minutes). With mixer at high speed beat
in eggs one at a time. With mixer at low speed add dry ingredi-
ents, beating until just blended. Chill dough about 1 hour for
easier handling. Line cookie sheets with foil. Roll teaspoons
of dough into balls; place about 2 inches apart on cookie
sheet. Bake 12 to 13 minutes at 350 degrees. Remove from oven and
place mint on each cookie. Decorate with sprinkles if desired.
Allow to cool before removing from foil. Makes about 80 cook-
ies.
