A cookie with low sodium and low fat; only 109 calories,
3/4 teaspoon oil per bar. Source is "The Low Sodium, Fat-Con-
trolled Cookbook" by Payne and Callahan 1963.

3/4 c. sifted all-purpose
1 c. sugar
1/4 tsp. low sodium baking
1/2 c. vegetable oil
3 medium egg whites
1/2 tsp. vanilla
1 c. (7 1/4 oz. pkg.) dates,
finely cut
1 c. chopped walnuts
Mix and sift flour, sugar and baking powder. Make a
well and add in order: vegetable oil, egg whites and vanilla.
Beat until smooth. Add dates and nuts, mix well. Turn into
lightly oiled baking pan (12 x 7 x 2-inches). Bake in 350 degrees
oven 20 to 25 minutes. Cut into bars while warm. Dust lightly
with confectioners sugar if desired.
