CRACKING NUTS

Place 1 cup water, cooking rack and unshelled nuts in
pressure cooker. Do not fill pressure cooker over 2/3 full.
Close cover securely. Place pressure regulator on vent pipe.
Cook 5 to 6 minutes for Brazil and/or hard thick shelled nuts.
Cool pressure cooker at once. A light tap with a hammer will
open the shells and the nut meats may be removed whole. If
nuts are moist, place in a warm oven for a few minutes to dry.
