BELGIAN WAFFLES

1 pkg. dry yeast
2 c. lukewarm milk
4 eggs, separated
1 tsp. vanilla
2 1/2 c. sifted flour
1/2 tsp. salt
2 tsp. sugar
1/2 c. melted margarine

Sprinkle yeast over warm milk; stir to dissolve. Beat
egg yolks until light. Add milk and yeast. Sift flour, sugar
and salt together. Beat into liquid ingredients. Stir in
melted margarine. Beat egg whites until stiff. Fold into
batter. Let mixture stand in a warm place for 45 minutes.
Bake in Belgian waffle iron. Makes 6 waffles. Good topped
with fruit and whipped cream.
