BRANDIED CHERRIES

1 qt. fresh cherries
3 c. sugar
1 c. brandy

Wash, pit and dry cherries. Cut them into pieces. Add
sugar and let stand 1 hour, stirring every 15 minutes. Pack in
either a 1/2 gallon or 1 gallon, wide-mouthed, sterilized glass
jar. (A large jar is needed because extra air space is needed
to complete the fermentation process.) Pour in brandy. Tightly
screw on lid. Place jar in cool dark place and leave it alone
for 3 months. When ready, can be put in small container. Need
not be refrigerated. Good on ice cream.
