SMITTY'S CORNISH GAME HENS
(Sir Nobles' Adventures)
2 Cornish game hens
1 (6 oz.) can orange juice,
thawed, but not diluted
1 (No. 2) can sauerkraut,
drained

Rinse and pat dry the game hens. Mix the thawed orange
juice thoroughly with drained sauerkraut (you should use your
hands!) and cram it into the birds. Bake in a covered Dutch
oven at 325 degrees for 1 1/2 to 2 hours, basting occasionally with
juice. Serve with rice. Serves 2 to 4.
Option: This is much better, more succulent, if cooked
in a crock-pot. You can put it on in the morning on low, or if
you forget and don't remember until around 2:30 or 3:00 p.m.,
cook in on high for about 2 1/2 to 3 hours.
