COUNTRY MEAT LOAF MICROWAVE

2 Tbsp. salad oil
1 medium onion, chopped
1 celery stalk, chopped
3 slices bread
2 lb. ground beef
1 medium carrot, shredded
1 1/2 tsp. salt
1/4 tsp. pepper
1 egg
1 (8 oz.) can tomato sauce
1 Tbsp. brown sugar
1 Tbsp. vinegar
1 Tbsp. prepared mustard

Cook onion and celery until tender in salad oil about
ten minutes. Tear bread into small pieces; add to onion
mixture. Add beef, carrot, salt, pepper, egg and 1/2 of tomato
sauce. Mix well. Shape into loaf and place in glass baking
dish. Set aside. Mix brown sugar, vinegar, mustard and
remaining tomato sauce in a cup. Spoon over meat loaf. Cook
on High power 26 to 30 minutes, rotating dish halfway through
cooking time. Remove from oven and let stand 10 minutes to
complete cooking.
Note: In a conventional oven, bake at 350 degrees for 1 1/2
hours. Serve meat loaf warm or cover and refrigerate to serve
cold layer. Makes 8 servings.
