WHITE SAUCE

4 Tbsp. butter or margarine
2 c. milk
1/4 tsp. white pepper
1/2 tsp. salt
4 Tbsp. flour

Place butter in a 1 quart glass bowl. Microwave,
uncovered, on Cook for 1 1/2 to 2 minutes or until melted.
Stir in flour, salt and pepper, making a smooth paste. Gradu-
ally add milk, blending well. Microwave, uncovered on Cook for
4 1/2 to 6 minutes or until sauce is thick and bubbly.

Variations:
Cheese Sauce: Add 1 cup to 1 1/4 cups shredded cheese
(Cheddar, Swiss, Parmesan or combinations of cheeses) into
finished sauce. If necessary, microwave on Cook for 1/2 minute
to melt cheese.
Curry Sauce: Stir in 2 to 4 teaspoons curry powder
along with flour.
Mustard Sauce: Add 4 to 6 tablespoons prepared mustard
to finished sauce. Season with dashes of Worcestershire sauce.
